After a few late night snacking binges, you may want to do something more substantial with that beautiful holiday ham. After all, you may still have family visiting so why not try these easy and delicious ways to make the most of your ham leftovers, whether it’s for breakfast, lunch — or another midnight snack! Ham and Cheese Breakfast Casserole
Even better for post-holiday noshing, this casserole is “light,” made healthier “primarily by losing a few egg yolks and using nonfat milk. Gruyère cheese has a delicious, nutty aroma and flavor, which means that with the relatively small amount in this recipe you still get a big impact.” What a great way to start your morning.
Baked Croque Monsieur
Warm, gooey and sinfully simple to make, Ina Garten’s croque monsieur sandwich is baked in the oven with a bit of Dijon mustard for spice.
Mini Cuban Sandwiches
What makes a great Cuban sandwich something people will drive across town for is that combination of spicy mustard, sour pickles, salty and sweet ham and juicy pork.
These mini versions from Food52, are “easy to make (and) delicious to eat … good for kids or adults.” The recipe author says they can be made ahead and eaten cold or reheated, and the mini version is perfect for a crowd.
Macaroni and Cheese with Country Ham
The idea of putting everything and anything into macaroni and cheese isn’t new. There’s mac and cheese pizza in Wisconsin. Zingerman’s Roadhouse in Ann Arbor has no fewer than a half-dozen variations on the menu at any time: pimento bacon macaroni, an andouille sausage mac, a version with smoked chicken, fresh corn, green chiles and monterey jack, “three peppercorn goat cheese” and a baked ziti with heirloom tomato sauce and fresh herbs.
This marvelous version from Saveur, ideal for ham leftovers, adds cayenne pepper for a little kick and repurposes leftover biscuits for a buttered crumb topping.
Shirred Eggs and Ham
Break out the cast iron skillet for this filling, simple breakfast.
Shirred eggs are simply eggs baked with heavy cream, tomato sauce and, of course, your leftover ham cut to fit the skillet. This recipe, republished on Huffington Post, comes from The Lodge Cast Iron Cookbook: A Treasury of Timeless, Delicious Recipes (2012). Not counting the time it takes to heat up the oven, these eggs and ham take only five minutes.
