First, a universal truth: the best way to enjoy holiday ham leftovers may be straight out of the refrigerator, bits of crunchy glaze still clinging to the edges.
But there is the old saying that eternity might be defined as two people and a ham. After a few late night snacking binges, you may want to do something more substantial with that beautiful holiday ham.  After all, you may still have family visiting so why not try these easy and delicious ways to make the most of your ham leftovers, whether it’s for breakfast, lunch — or another midnight snack!  Your family and friends will thank you.
Ham and Cheese Breakfast Casserole

Ham & Cheese Breakfast Casserole

Ham & Cheese Breakfast Casserole from Eating Well

Breakfast casseroles are among the most forgiving of family-friendly dishes. Put whatever you have lying around the fridge, from bell peppers and caramelized onions to broccoli and asparagus, into a casserole like this one from EatingWell, and it’s a good bet it will be delicious.
Even better for post-holiday noshing, this casserole is “light,” made healthier “primarily by losing a few egg yolks and using nonfat milk. Gruyère cheese has a delicious, nutty aroma and flavor, which means that with the relatively small amount in this recipe you still get a big impact.” What a great way to start your morning.

Shirred eggs are simply eggs baked with heavy cream, tomato sauce and, of course, your leftover ham cut to fit the skillet. This recipe, republished on Huffington Post, comes from The Lodge Cast Iron Cookbook: A Treasury of Timeless, Delicious Recipes (2012). Not counting the time it takes to heat up the oven, these eggs and ham take only five minutes.
